I'm always trying to come up with yummy, nutritious meals and snacks for my son's lunchbox. I also try and change it up every day so it doesn't get boring. Today's lunch included my new creation that is a delicious change from a plain old pb&j.
Ingredients:
1 Whole Wheat Tortilla
2T or so of Peanut Butter or Almond Butter
1/2 Apple, Diced
2T or so of Granola (I used Bear Naked Fit Vanilla Almond Crunch which only has 4g of sugar per serving!)
Directions:
Spread nut butter over tortilla. Sprinkle with diced apple and granola. Tightly roll up tortilla. Cut in thirds.
Voila! Great for adult lunches too!
